🛒 Ingredients (for 4 servings)
- Sabzdaneh Chickpeas: 1/2 cup
- Sabzdaneh Beans: 1/2 cup
- Sabzdaneh Lentils: 1/2 cup
- Rice: 2 tablespoons
- Sabzdaneh Ash Noodles: 100g
- Large onion: 1, chopped
- Garlic: 2 cloves, finely chopped
- Sabzdaneh Ash herbs (leek, parsley, cilantro): 2 cups, chopped
- Oil: 2 tablespoons
- Sabzdaneh Salt, Pepper, Turmeric: to taste
- Sabzdaneh Dried Mint: for garnish
- Kashk (fermented whey): for serving
🥄 Instructions
- Soak the legumes
Soak chickpeas and beans in water overnight to reduce gas and make them cook faster. - Cook the legumes
Place chickpeas, beans, and lentils in a pot with enough water and boil over medium heat until partially cooked. - Sauté onion and garlic
Fry the chopped onion in oil until golden, then add garlic and sauté briefly. - Add herbs and rice
Add the washed Ash herbs and rice to the pot, mixing everything together. Let the Ash simmer over low heat for about 20 minutes until the herbs soften. - Add the noodles
Break the Ash noodles into pieces and add them to the pot. Stir regularly to prevent the noodles from sticking. - Season and serve
Add salt, pepper, and turmeric and cook for 5 more minutes. Serve the Ash in bowls and garnish with fried mint and kashk.
